Training

Food Service Sanitation Manager Certification (FSSMC) is required by Section 750.540 of the Illinois Food Service Sanitation Code based on the food service establishment’s risk category assigned by the local health department. AFSSMC is earned by completing an approved eight hour course with an Illinois approved instructor and passing a national exam accredited by the Conference for Food Protection with a 75% or higher.

As of July 1, 2014, Section 750.570 of the Illinois Food Service Sanitation Code requires food handler training in certain conditions.  A “food handler” or “food employee” means an individual working with unpackaged food, food equipment or utensils, or food-contact surfaces. “Food employee” or “food handler” does not include unpaid volunteers in a food establishment, whether permanent or temporary.
